- 1/3 cup oil
- 1/2 tsp salt
- 1/2 cup chopped onion
- 4 eggs
- 3/4 cup Bisquick
- 3 cups grated zucchini
- 1 cup grated cheese
- Optional - green peppers, bacon bits
I didn't get a picture of the finished result because we were too busy devouring it. But it comes out a nice golden brown.
This looks delicious! And I have a TON of zucchini from our garden I can put this recipe to use with, thank you! Oh, and what size pan did you use, 13x9?

ReplyDeleteI have made this twice now, and it was a huge hit both times. My husband said I could make it every other day and he would be happy, he loved it! And most of my kids devoured it, with only my two pickiest eaters making a face, but they make faces about everything, so it was normal. My other 5 kids loved it, and ate every bite, and even asked for seconds. Oh, and I made 1 1/2 times the recipe and baked it in my 15x10-inch casserole dish since there are so many of us, and I only had one serving left over after supper was over. Thanks Barbra, this recipe is awesome!
